3 Quick Snacks you can make for cheap

Ever wanted a quick snack you can whip up in no time for guests? Well I have three!!!

I collaborated with Ozoz Okoh of the Kitchen Butterfly to bring you three easy and affordable snack ideas. They are twists on good old Nigerian recipes.

1. Plantain chips with a bean & coconut dip

This recipe is inspired by Frejon, an Easter dish of beans cooked till soft and mushy in coconut milk. It’s quite easy to put together and goes very well with plantain chips.

 

It’s easy to make right before serving, or even ahead of time. Store-bought plantain chips work a treat with this.

Ingredients

1 cup of beans – brown or white, cooked

1/3 cup coconut milk, or to taste

Salt and chili pepper, to taste

 

Tomatoes, diced

Green bell pepper, diced

Cilantro, chopped

Directions 

Heat up the beans in the coconut milk, salt to taste.

Allow cool then process in a blender till thick and creamy. Add more coconut milk if you’d like it thinner

Season to taste with salt and pepper

Scoop creamy dip into a serving dish and top with diced tomatoes, bell peppers and chopped cilantro.

Serve with ripe and unripe plantain chips

2. Veggie sticks with yaji-hummus

This is a quick and easy dip that can be made to taste. The yaji adds a spicy kick and pairs well with vegetable sticks. Also delicious with plantain chips or used as a sandwich spread

Ingredients

1 400g tin chickpeas

1 – 2 teaspoons Yaji/ suya spice, to taste

1 – 2 tablespoons lemon juice

1 – 2 garlic cloves

1 – 2 tablespoons olive oil

1 – 2 tablespoons Tahini – sesame seed paste

Salt, to taste

Directions 

In a blender, combine all the ingredients.

Process till smooth. If you need to thin it, add hot/ warm water by the tablespoon and process till to your liking.

Scoop out into a bowl and salt to taste.

Finish with a drizzle of olive oil and a sprinkling of yaji.

Serve with veggie sticks.

3. Guguru & Groundnut

A quick and easy mix that’s perfect for snacking and movie-watching. Combine ingredients to suit your palate and desires 🙂

Ingredients 

Popcorn

Groundnuts/ peanuts, skinned

Chocolate (M & Ms/ Smarties)

Coconut flakes

Directions

Pop your corn at home or use storebought [Torera, can you add your directions for popping corn?]

In a large bowl, combine pop corn, ground nuts, chocolate, coconut flakes and raisins.

Mix well so it’s well combined. Feast
